Most of us love munching snacks in the evening time with a hot beverage. If you are someone who relies too much on store-bought deep-fried snacks, you should try meal prepping these simple and healthy snack recipes for a week. They are tasty, easy-to-cook and time-saving. Spend a few hours on a lazy day to prepare these delicious snacks and enjoy them throughout the week.
Vegetables: carrot, capsicum, cabbage, ginger, garlic, onion and curry leaves (optional)
Spices: Salt, pepper, chili powder, sugar
Ready-made: soy sauce, chili sauce, ketchup, vinegar
Staples: Plain flour, corn flour, oil, bread, rice flakes
Meal Prep Procedure
Chop onions, carrots, cabbage, capsicum into thin dices. Sauté them on a pan, add salt and pepper and store this mixture in a box. This stays good for 3 days in the refrigerator.
Make flour dough for dumplings and quesadilla. Make dumplings, roti and freeze them.
Add mayonnaise to the vegetable mixture and use that as the spread for sandwich and quesadilla.
Make Manchurian balls and cutlets and freeze them.
These meal prepped items stay good in the fridge for a week. You can freeze them for a month.
Veg Mayo Sandwich
Mix mayo to the veg mixture, spread on the bread slices to make quick sandwiches.
Make wrappers from scratch or use store bought one. Mix plain flour with salt and water to make a dough. Make small balls, flatten them. Fill the veg stuffing, fold it into dumplings, pan fry or steam for 5 minutes.
Make tortillas, roti or use store-bought one. I made roti using the same plain flour dough.
Spread ketchup or marinara sauce on the tortillas. Add the veg stuffing and grated cheese (optional). Fold and fry on both sides on a pan.
Veg Manchurian Balls
Add 2 tsp corn flour and plain flour to the vegetable mixture. Adjust the seasoning and add water. Make it into small balls and deep fry in oil.
Heat oil in a pan. Add chopped ginger, garlic, onion, capsicum, tomato sauce, soy sauce, chili sauce, vinegar, sugar, salt and fried Manchurian balls and cook for 5 minutes.
For freezing, do not add the Manchurian balls in the sauce. Store the deep fried balls and sauce separately and mix only when you eat.
Soak 1 cup flattened rice flakes or oats (Optional) for 10 minutes.
Add the vegetables to the soaked mixture and season with chili powder, chat masala, onion, curry leaves and salt. Add 2 tsp plain flour to make a dough. Shape the mixture into cutlets, coat with breadcrumbs and shallow fry in oil.
