It takes only a few ingredients to prepare these five healthy meals. You can refrigerate them for up to 3-5 days and freeze them for a month. I have focused on the meal prep of the side dishes. You can pair them with any main dish of your choice.
All in One Chicken Mince Mixture
Mix raw chicken mince with salt, pepper, dried herbs, chili powder, cumin powder, garam masala, and tomato sauce.
Separate it into two portions. Use the first batch for the first 2 recipes and the second batch to make a few meatballs for the 3rd and 4th and shape the remaining into patties for the 5th recipe.
Day 1-Chicken Mince Rice
Prepare white rice.
Chop carrots, capsicum, green onions, ginger, and garlic.
Recipe: Heat oil in a wok. Add ginger, garlic, green onion, carrot, capsicum, and fry for 5 minutes. Cook for 8 minutes after adding the soy sauce and chicken mince mixture. Add the steamed rice and adjust the salt accordingly.
Storage: Cool the fried rice. Put it in an airtight container and toss it in the refrigerator. When necessary, reheat or microwave.
Day 2-Stuffed Peppers
Chop the heads of the bell peppers and deseed them.
Recipe: Fill the bell peppers with the chicken mince mixture and bake for 20 minutes at 220 degrees Celsius.
You can cover the bell peppers with aluminum foil and slowly roast them in a pan for 20 minutes too.
Storage: Wrap each pepper separately in aluminum foil and store it in an airtight container. Fry them on the Tawa for a minute before serving.
Day 3-Meatballs in Tomato Gravy
Shallow fry the meatballs in oil.
Cook rice or roti according to your choice.
Chop 2 onions and 4 tomatoes.
Recipe: Heat oil in a pan. Fry the onion, ginger, garlic paste, and tomatoes until they are soft. Add spice powders like turmeric, chili powder, coriander powder, salt, and a pinch of sugar. Drop in the fried meatballs and simmer for 10 minutes.
Storage: Meatball gravy can be stored in a box and reheated as needed.
Day 4 – Meatball Spaghetti
Recipe: Take the required portion of the tomato sauce and add it to the cooked spaghetti in a pan. Add a little water if you like a thinner pasta.
Storage: Store cooked spaghetti in a separate container and sauce in another container. Mix them before you eat.
Day 5-Cheese Patties
Fry the patties in oil for 8 minutes. Cover and cook by sprinkling some water. Add a cheese slice on top of the patty and let it melt.
Recipe: Place the fried patties in a pan. Cover it with a lid, let it cook for 2 minutes, and serve with bread. You can make burgers too.
Storage: Cool the patties and store them in an airtight container. Before serving, microwave or reheat.
