It takes only a few ingredients to prepare these five healthy meals. You can refrigerate them for up to 3-5 days and freeze them for a month. I have focused on the meal prep of the side dishes. You can pair them with any main dish of your choice.
All in One Chicken Mince Mixture
Mix raw chicken mince with salt, pepper, dried herbs, chili powder, cumin powder, garam masala, and tomato sauce.

Separate it into two portions. Use the first batch for the first 2 recipes and the second batch to make a few meatballs for the 3rd and 4th and shape the remaining into patties for the 5th recipe.
Day 1-Chicken Mince Rice
MEAL PREP:
Prepare white rice.
Chop carrots, capsicum, green onions, ginger, and garlic.
Recipe: Heat oil in a wok. Add ginger, garlic, green onion, carrot, capsicum, and fry for 5 minutes. Cook for 8 minutes after adding the soy sauce and chicken mince mixture. Add the steamed rice and adjust the salt accordingly.

Storage: Cool the fried rice. Put it in an airtight container and toss it in the refrigerator. When necessary, reheat or microwave.
Day 2-Stuffed Peppers
MEAL PREP:
Chop the heads of the bell peppers and deseed them.
Recipe: Fill the bell peppers with the chicken mince mixture and bake for 20 minutes at 220 degrees Celsius.
You can cover the bell peppers with aluminum foil and slowly roast them in a pan for 20 minutes too.

Storage: Meatball gravy can be stored in a box and reheated as needed.
Day 4 – Meatball Spaghetti
MEAL PREP:
Cook spaghetti.
